The process occurs inside our own seasoning warehouses

Every day the wheels produced by the dairies are transferred into our warehouses, where expert staff dedicate themselves carefully to the different phases of the seasoning. Warehouses represent a fascinating and charming world, where the cheese “lives” and matures, and over the months becomes a product of extraordinary quality.

The minimum seasoning for Parmigiano Reggiano is 12 months, but just with 24 months and over it expresses the best organoleptic characteristics. Grana Padano has shorter seasoning, minimum 10 months up to and over 16.

Over 400.000 wheels including both Parmigiano Reggiano and Grana Padano are seasoned every year.
