What is natural milk creaming?

Natural creaming is the process by which the fatty part of milk naturally rises to the surface while the milk is left to rest. In Grana Padano, the milk is partially skimmed through natural creaming before processing: this is one of the aspects that helps explain the ingredients of Grana Padano and some of the differences compared with Parmigiano Reggiano.
