An immersive experience in the Parmigiano Reggiano PDO supply chain
On March 17, BONI SpA hosted a training visit for Migross, involving around 50 professionals, including buyers, category managers, and store operators.
The event was organized in collaboration with the Parmigiano Reggiano Cheese Consortium, with the aim of offering a practical and in-depth experience of the production chain — a key element in understanding and enhancing the product within modern retail.
A dynamic journey through BONI’s dairies
To ensure an effective and engaging visit, the group was divided into two, allowing activities to take place simultaneously in BONI SpA’s two company-owned dairies.
This setup made it possible for participants to experience every stage of production firsthand, observing the cheesemakers at work and the process that transforms milk into Parmigiano Reggiano. An experience that highlights not only technique, but also the value of craftsmanship, precision, and respect for timing — essential elements for a PDO product.
The warehouse: where the product takes shape
The visit then continued to the aging warehouse, a unique space where Parmigiano Reggiano evolves over time and develops its distinctive characteristics.
Here, participants took part in a guided tasting led by an expert taster from the Parmigiano Reggiano Consortium, comparing three different aging stages. A particularly meaningful moment that connected theory with sensory perception, helping participants understand how time influences the product’s flavor, texture, and use.
The BONI supply chain: an integrated and controlled system
During the day, participants also explored BONI SpA’s production model, based on an integrated supply chain that starts at the farm and continues all the way to the finished product.
A system that makes it possible to maintain control over every stage — from milk production to cheesemaking — ensuring high standards of quality, safety, and traceability. Today, this approach represents a distinctive strength for those working in large-scale retail, where offering reliable and clearly recognizable products is essential.
An experience that creates value
The visit concluded with a convivial moment, offering the opportunity to share impressions and strengthen the dialogue between production and distribution.
For BONI SpA, welcoming a large and highly qualified group like Migross represents an important opportunity to share not only expertise, but also a product culture based on quality, transparency, and passion.
An experience that shows how understanding the supply chain also means knowing how to tell its story — and therefore how to enhance its value every day at the point of sale.
