The identity of Grana Padano cheese

The name Grana Padano cheese refers to a product with protected origin, made throughout the year from raw, partially skimmed cow’s milk. It is a cooked, hard cheese characterised by a relatively shorter ageing period compared to other Italian hard cheeses. Produced in full compliance with the strict rules established by the Grana Padano Consortium, Italian Grana Padano cheese is valued for its versatility and balanced flavour. Thanks to its structure and aroma, Grana Padano DOP is widely used grated or added to a variety of dishes, making it an essential ingredient in both traditional and modern Italian cuisine.

Area of origin

The production and grating of Grana Padano cheese are strictly limited to a clearly defined area of Northern Italy, as established by the PDO specification. This area includes selected provinces in Piemonte, Lombardia, Veneto, Trentino-Alto Adige and Emilia-Romagna, such as Alessandria, Asti, Biella, Cuneo, Novara, Torino, Verbania and Vercelli; Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milano, Monza, Pavia, Sondrio and Varese; Mantova on the left bank of the Po River; Trento; Padova, Rovigo, Treviso, Venezia, Verona and Vicenza; as well as Bologna on the right bank of the Reno River, together with Ferrara, Forlì-Cesena, Piacenza, Ravenna and Rimini.
The production area also includes the municipalities of Anterivo, Lauregno, Proves, Senale–San Felice and Trodena in the province of Bolzano. This extensive and diverse territory, with its specific climatic and agricultural conditions, is what gives Italian Grana Padano cheese its distinctive identity and consistent quality.

Production process

Grana Padano DOP is produced from raw cow’s milk obtained through twice-daily milking. The milk is collected and processed within 24 hours, ensuring freshness and preserving its natural qualities throughout the early stages of production. This careful handling is essential to maintaining the consistency and reliability of Grana Padano cheese.

Cow feeding follows strict rules defined by the production specification. The basic diet consists of fresh green fodder or preserved forage, all sourced from the farms themselves or from within the official Grana Padano milk production area. This controlled feeding system plays a key role in guaranteeing the quality, safety and authenticity of Italian Grana Padano cheese, while respecting the traditional standards that define Italian Grana Padano.

The raw, partially skimmed milk used to produce Grana Padano cheese must not undergo any physical, mechanical or thermal treatment that could alter its natural characteristics. The milk is transferred into overflow vats made of copper or fitted with a copper lining, in accordance with traditional cheesemaking practices.
The use of lysozyme is permitted by the production specification, except for Trentingrana, up to a maximum of 2.5 grams per 100 kilograms of milk. Coagulation is achieved using calf rennet, following the addition of natural whey starter.

Once coagulated, the curd is broken into fine granules and slowly cooked until the grains become elastic, at a maximum temperature of 56°C. The curd remains fully immersed in the whey in the same vat for up to 70 minutes after cooking. It is then placed into moulds and held in a marking belt for at least 48 hours, during which the official indications of origin are impressed on the rind. The wheels are subsequently immersed in brine for a period ranging from 14 to 30 days, completing the transformation phase and preparing the cheese for ageing.

Marks and Branding

The official mark certifying that a cheese meets all the requirements to be labelled as Grana Padano Protected Designation of Origin consists of a distinctive rhomboidal design. The rhombus is crossed along its lower diagonal by a wide band bordered by two parallel upper strips and two parallel lower strips. At the centre of this band, the words “GRANA” and “PADANO” appear in capital letters on two separate lines.

In the upper and lower corners of the rhomboid—characterised by rounded vertices—the initials “G” and “P” are displayed respectively. This official marking guarantees the authenticity of Grana Padano cheese, confirming its compliance with the production specification and its recognised status as an Italian Grana Padano cheese protected by the PDO system.

Seasoning andQuality inspection

The natural ageing of Grana Padano cheese takes place in dedicated maturation vaults, where temperature is carefully controlled between 15°C and 22°C. The minimum ageing period is nine months from the date of production, during which the cheese develops its structure, aroma and characteristic flavour.

Quality inspection is carried out only after at least eight months of ageing have been completed. Each wheel is individually examined, and the outcome of this inspection determines whether the cheese meets the requirements of Grana Padano DOP. Approved wheels are marked by fire, while those that do not comply have the markings of origin impressed by the belts removed through crossing or bleaching.

A wheel cannot be marketed as Italian Grana Padano cheese before completing the ninth month of ageing. Until that time, the product must remain within the official production area, ensuring full compliance with the PDO specification and guaranteeing authenticity and traceability.

Nutritional Values

Grana Padano cheese is valued for its nutritional profile and versatility, making it suitable for a wide range of dietary habits. From a technical point of view, it is classified as a semi-fat cheese, as it is produced using partially skimmed milk. A 50-gram serving provides a balanced lipid intake, with fats largely composed of unsaturated fatty acids, which are considered beneficial within a balanced diet.
Grana Padano contains no carbohydrates and is naturally lactose free, a result of its production process and ageing. For this reason, Italian Grana Padano cheese is also suitable for people with lactose intolerance, while still offering concentrated nutrients and a rich, satisfying flavour.
