A day dedicated to discovering Parmigiano Reggiano and its outstanding production chain

There are experiences designed to tell the story of quality, and others that allow you to live it.
The training day for Esselunga operators, organized in collaboration with the Parmigiano Reggiano Consortium and hosted by BONI SpA — was both.

It was a meeting point of expertise, curiosity, and passion that brought one of Italy’s leading modern retailers inside our company to experience the world of Parmigiano Reggiano PDO and to understand what it truly means to work within a fully controlled and transparent supply chain.

A journey through the BONI SpA supply chain

The day began at the BONI Dairy 2332, where the Esselunga team followed the various stages of Parmigiano Reggiano production — from heating the milk in traditional copper vats to the birth of the first wheels and their immersion in brine.
A process that tells not only of method, but of the care and precision that guide every gesture of our cheesemakers.

After visiting the dairy, the group moved to the aging warehouses, the silent heart of the company, where thousands of wheels rest for months, slowly transforming into BONI Parmigiano Reggiano.
In this space, marked by time and the unmistakable aroma of cheese, visitors could fully grasp how quality is the result of patience, experience, and daily dedication.

The S.A.P.A.R. farm: where quality begins

The journey then continued to S.A.P.A.R., BONI SpA’s own farm located in Torrile.
Here, across more than 400 cultivated hectares and with over 2,000 dairy cows (Frisona and Bruna Alpina breeds), is where the raw material that fuels our production cycle is born.

The farm represents a virtuous model of agricultural and industrial productivity, where respect for the environment, controlled feeding, and the constant presence of veterinarians and nutritionists ensure milk of the highest quality.
This visit offered guests the opportunity to experience firsthand the value of an integrated supply chain — one that connects agriculture, production, and aging in a perfect balance between tradition and innovation.

Learning to enhance value

The day concluded with a tasting session of BONI SpA products, a convivial moment to share experiences and reflections around a common theme: the importance of truly knowing what we bring to the table.
It was an informal yet educational encounter that reinforced how collaboration between producers, consortia, and retailers is essential to promoting Italian excellence.

For us at BONI SpA, welcoming a group like Esselunga, a symbol of quality and a benchmark in Italian retail, is a source of great pride.
It represents recognition not only of the strength of our supply chain but also of our daily commitment to ensuring transparency, safety, and authenticity, from milk to finished Parmigiano Reggiano.

“Welcoming Esselunga professionals to our dairies and farm means sharing the values that unite us: the pursuit of quality, respect for tradition, and the responsibility to offer consumers only the very best.”
