What is the dairy identification number?
The dairy identification number is the code that identifies the producing dairy. It is one of the elements shown on the wheel and makes it possible to trace the product’s origin. Parmigiano Reggiano wheels produced by Boni SpA in its own dairies in Parma are identified and recognizable by the numbers 2331 and 2332 impressed on the rind. These identification numbers, issued by the Protection Consortium, identify the two dairies.
