Boni SpA, produces about 80.000 Parmigiano Reggiano wheels per year in its three dairies, and 60.000 of them are produced with its traditional 2331dairy. BONI SpA also buys and then matures in its seasoning warehouses many other cheeses, coming from other dairies selected for their quality and features within Parmigiano Reggiano area of production, in particular from the Provinces of Parma and Reggio Emilia.
Thanks to this activity BONI SpA manages to guarantee both high quantities of available products and wide quality range, which allows to satisfy all requests of Italian and foreign operators.

Within Boni SpA high quality production of dairy 2331, the best wheels – that is to say those that manage to reach the higher quality standards in terms of structure of the paste, weight, organoleptic properties – are selected and personalized by fire-branding with "BONI, l'Eccellenza" symbol. This is the proof of its authenticity.
